Ok, here we go - all the details about my top five ideas for how to pack pizza for lunch!
1: Mini Pizzas
Just as the name says - small versions of pizza. You can make English muffin pizzas super fast in your oven or toaster oven. Or if you have pizza dough and are making homemade pizza for dinner, just make some mini pizza crusts to save for lunch. All you need is some kind of bread base, a little smear of sauce, and a sprinkle of cheese.
2: Pizza Bites and Strips
Take that leftover pizza and cut it into bite sized nibbles, or smaller strips. One of my top tips for packing lunch that will get eaten in the limited amount of time kids have at school is to give them food that is already bite sized. It’s just faster for them to eat, especially for the little ones. You can give them fun little picks to eat with, or put the bites on a mini skewer, or even cut in fun shapes. Here are just a few fun examples of cut up leftover pizza for lunch.
3: Pizza Rolls
This is one of my favorite make-ahead and freeze lunch ideas. Pizza rolls are super easy to make with packaged crescent or biscuit dough, they back up fast and they freeze great. I like to keep a bag of these in my freezer at all times, all you have to do is pull a couple out and pop in the lunch box with a little fruit or veggie and maybe a little extra protein on the side, and lunch is done in minutes. You can find my pizza rolls recipe here.
The Pizzadilla!
We love quesadillas, and we love pizza - why not combine the two? This is just a quesadilla, with a little spoonful of pizza sauce and shredded mozzarella cheese. You can add in any other kind of pizza toppings as well if you like. It’s a great way to use up a little bit of extra sauce.
The Pizza Melt
This one is like a grilled cheese, but with mozzarella cheese instead of American or cheddar, and a little pizza sauce. I don’t necessarily recommend this one for the littler kids, because it can be a bit messy, but it’s a fun way to mix up the lunch for your older ones. Add in some pepperoni or other favorite pizza toppings.
