Lunch for kids and mom!

This one is a bit of a smorgasbord - lunch for 4 kids and me, for a day out at the park. This was a clean out the fridge kind of lunch - just enough of one thing for one person, so we each got something a little different. Lunch packing is a great way to use up little bits of stuff in your fridge. 

Details on each lunch are below..

The top left was my lunch. This was a leftover salad from the grocery store deli. It is one of my favorite salads - they call it SuperFood, and it's got all the good stuff in it - kale, edamame, carrots, sunflower seeds, tomatoes, and more, with a really nice light and slightly sweet dressing. I haven't tried to make it at home yet, but I did find a recipe online that looks pretty close - although this one is missing the tomatoes. Give a try and let me know.  In my lunch I also had a piece of leftover chicken, and some pretzel sticks. 

Bottom left lunch has a toasted cheese sandwich cut into sticks. a slice of ham, berries, and tomatoes. 

In the middle there is cottage cheese with peaches in the thermos container, and in the other small container is roast beef with cream cheese, and berries. 

The two on the right are nearly identical - leftover slices of pancake, a yogurt tube, banana, cheese, and berries. One has tomatoes and one has cucumbers.
