School Lunch Day 44 - chocolate chip pancakes
The Lunch Idea:
Breakfast for lunch! This is the last lunch I'm packing for two weeks! We're heading out on vacation later in the week, and I'm going to let the kids buy school lunch on the last day so that I don't have to deal with washing lunch boxes and putting stuff away right before we leave town. So what better for our last school lunch of November, but chocolate chip pancakes?
We made these on Sunday and of course I made a ton extra. Aside from a few mini chocolate chips in each pancake, these are relatively healthy. I make them with whole wheat flour, whole milk, extra eggs, and this time I added a bunch of ground flax this time too. My basic pancake recipe is here, but the secret thing about pancake recipes is that they are really flexible, so you can use any recipe you like and just adapt it however you want. Try different kinds of flour, or add in nuts, or cut back on the milk a little and add extra eggs for more protein. They are hard to mess up.
What's in the lunch:
- Chocolate chip pancakes
- on the side three of them have a combination of plain yogurt, maple syrup, and whipped cream. The fourth one has cottage cheese, because she loves it.

- one child has a few pomegranate seeds
Questions & Tips:
- Pancakes freeze great! I always, always, always make lots extra and freeze them. They are great for lunches, or after school snacks, or easy school day breakfasts.
- Maple syrup is a great sweetener and flavoring - I mix it with yogurt all the time, and I always sweeten my whipped cream with it.
