Another week of school lunches
Another week in the books. It wasn't our best week ever, we're still fighting that fall school germ season, but we managed to get through it. One of my kids has asthma, so the cold season that makes the rest of us just uncomfortable can hit her pretty hard. And we had a couple of hard nights. I'll tell you, making these lunches the night before definitely saved my bacon a couple of days - after being up much of the night with a sick kiddo, there's no way I'd be making lunch in the morning. My kids would have been stuck with a school cafeteria lunch.
So my biggest lunch making advice for this week: make your lunches the night (or day) before. It really makes the morning so much easier! When I've really got my act together I make the lunches in the afternoon the day before. Doing that means you need at least one extra set of lunch boxes, since you'll be making lunches while your kids are still at school. This leads me to a couple more of the many reasons why I love the Easy Lunchboxes: 1) they are inexpensive. I'm making 4 lunches, sometimes 5. To make them ahead of time means I need at least 2 full sets - or 8 lunchboxes. And really it's nice to have even more. Some of the popular lunchboxes out now are so crazy expensive, but the Easy Lunchboxes are not. 2) They nest and stack, so they store really well without taking up a ton of space, so I can have a dozen boxes easily handy in my kitchen.
