School Lunch Day 83 - Leftover Breakfast for lunch
If you haven't been packing breakfast for lunch, you need to start! It's always one of our most popular packed school lunches.
It's breakfast for lunch again today, because that's just the kind of mood I was in. I don't know why, but I find these kind of breakfast-for-lunch lunches to be the easiest to make. And today, in addition to still having pink eye, I now have a nasty cold too.
I made the kids my Dutch Baby recipe for breakfast today, by request. If you're wondering what that is - it's basically like an eggy baked pancake. It's really quick and easy to make - just throw everything in the blender, and then pour in a hot buttered pan, and bake. And since I hadn't yet packed their lunches, I just packed up the leftover breakfast for lunch.
Three of them have pieces of the dutch baby, with a slice of banana bread on the side. One claimed to not like the breakfast today, so she just got banana bread. Along with that they all have some yogurt, cheerios, raspberries, and cheese.
